A growing body of data has demonstrated a positive association between the risk of gallbladder cancer and high dietary intake of advanced glycation end-products (AGEs). These noxious compounds are important contributors to the onset of a chronic inflammatory response, through the activation of the receptor of AGEs (RAGE). We herein discuss how RAGE activation is crucial in the development of gallbladder cancer and the relevance of new incoming data supporting the role of dietary interventions to reduce the risk of gallbladder cancer. |
