Involuntary or voluntary exposure to gluten in long-term gluten-free diet celiac patients could lead to severe and persistent symptoms. Aspergillus niger prolyl endopeptidase is able to metabolize gluten before it arrives into the small intestine, reducing the celiac disease-specific symptoms. It is demonstrated by the decrease in the concentration on gluten immunogenic peptide. |
